Medium- to full-bodied, it’s taut and chalky, with a tightly wound core of fruit and a spine of bright acidity. Notes of oyster shell, wet stone, and freshly baked bread underscore its depth, while the saline, lemon-inflected finish lingers with remarkable tension, precision, and length.

There are just 90 cases of Westborn’s excellent 2019 Blanc de Blancs. All Chardonnay from four Sonoma and Mendocino vineyards and largely barrel-fermented, it’s broad and fruit driven—almost peachy with pineapple accents—yet only medium-bodied. The WESTBORN Perpetual Reserve NV.02, based on the 2021 vintage, offers a striking interplay of depth and tension. Medium to full-bodied, it’s textural and multidimensional, revealing layers of dark spiced fruit, pastry, and dried flowers. The Perpetual Reserve NV. 02 is composed of 52% Pinot Noir, 41% Chardonnay, and 7% Pinot Meunier with 38 months in bottle on lees. This is half 2021 vintage and half reserve wine. The dosage is 6 g/l. It comes bounding out with exuberant notes of applesauce, lemon curd, and spice cake, leading to nuances of ripe pears and orange blossoms with a waft of honeycomb.
